These Chipotle Black Bean Burgers are a fantastic vegetarian meal that doesn't compromise on flavor. - Prepare the Vegetables
- Dice the mini sweet peppers, red onion, and kale.
- Sauté them in butter until translucent. Set aside.
- Prepare the Mixture
- In a large bowl, mash the garbanzo beans with a fork.
- Add the sautéed vegetables, chopped chipotle pepper, black beans, frozen peas, breadcrumbs, cornstarch, and corn. Mix well.
- Chill the Mixture
- Cover the mixture and refrigerate for 30 minutes. This helps to firm up the mixture for easier patty formation.
- Form the Patties
- Remove the mixture from the refrigerator and form it into 8 patties.
- Cook the Patties
- Option 1: Fry the patties in neutral oil for 7 minutes on each side until golden brown.
- Option 2: Bake the patties at 375°F (190°C) for 15 minutes, flipping halfway through.
- Serve
- Serve on buns and enjoy!
