Instructions

  1. Prepare the Vegetables
    • Dice the mini sweet peppers, red onion, and kale.
    • Sauté them in butter until translucent. Set aside.
  2. Prepare the Mixture
    • In a large bowl, mash the garbanzo beans with a fork.
    • Add the sautéed vegetables, chopped chipotle pepper, black beans, frozen peas, breadcrumbs, cornstarch, and corn. Mix well.
  3. Chill the Mixture
    • Cover the mixture and refrigerate for 30 minutes. This helps to firm up the mixture for easier patty formation.
  4. Form the Patties
    • Remove the mixture from the refrigerator and form it into 8 patties.
  5. Cook the Patties
    • Option 1: Fry the patties in neutral oil for 7 minutes on each side until golden brown.
    • Option 2: Bake the patties at 375°F (190°C) for 15 minutes, flipping halfway through.
  6. Serve
    • Serve on buns and enjoy!
