These 'Cab Cakes' offer a unique and flavorful vegetarian alternative to traditional crab cakes. The recipe uses finely chopped cabbage, mixed with a blend of seasonings, and fried until crispy. - Prepare the Vegetables
- Cut cabbage into quarters.
- Add the cabbage, mini sweet red peppers, and medium green scallions to a food processor. Process in batches until roughly chopped into dime-sized chunks.
- Mix the Ingredients
- Transfer the chopped vegetables to a large mixing bowl.
- Add Worcestershire sauce, lemon juice, Old Bay seasoning, eggs, prepared yellow mustard, mayo, parsley, and breadcrumbs. Mix well.
- Form the Patties
- Use a 1/4 cup measuring spoon to create patties from the mixture, making about 24 patties.
- Cook the Patties
- Preheat a mild-tasting oil to 375°F (190°C).
- Cook the patties two at a time, ensuring they are fully covered in oil, for 1-2 minutes until golden brown. Remove and place on a dry towel to drain excess oil.
- Serve
- Serve the cab cakes with cocktail sauce.
