This Banana Coffee Almond Cake is a delightful combination of sweet bananas, rich coffee, and crunchy almonds. It's easy to make and results in a wonderfully moist cake. The optional vanilla-coffee glaze adds an extra layer of flavor that makes it truly irresistible. Enjoy it warm or cold!

Instructions

  1. Preheat and Prepare
    • Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with butter or nonstick spray.
  2. Mix Wet Ingredients
    • In a large bowl, mash bananas. Stir in applesauce, coffee, eggs, sugar, and vanilla.
  3. Mix Dry Ingredients
    • In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Combine and Fold
    • Add dry ingredients to wet, stir until just combined.
    • Fold in almonds or chocolate chips if using.
  5. Bake the Cake
    • Pour into dish. Sprinkle more almonds on top if you like.
    • Bake for 30 minutes, or until a toothpick comes out clean and center feels set.
  6. Cool and Garnish
    • Let cool. Top with fruit and icing optionally (I used frozen blueberries and more almonds!)
  7. Prepare the Vanilla-Coffee Glaze (Optional)
    • In a small bowl, whisk powdered sugar with 1 tablespoon of coffee and vanilla.
    • Add more coffee a few drops at a time until it reaches a smooth, pourable consistency.
  8. Serve
    • Drizzle over cooled banana cake and enjoy as a warm dessert or a cold breakfast!
