Banana Coffee Almond Cake

This Banana Coffee Almond Cake is a delightful combination of sweet bananas, rich coffee, and crunchy almonds. It's easy to make and results in a wonderfully moist cake. The optional vanilla-coffee glaze adds an extra layer of flavor that makes it truly irresistible. Enjoy it warm or cold!

Instructions
- Preheat and Prepare
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with butter or nonstick spray.
- Mix Wet Ingredients
- In a large bowl, mash bananas. Stir in applesauce, coffee, eggs, sugar, and vanilla.
- Mix Dry Ingredients
- In another bowl, whisk together flour, baking soda, cinnamon, and salt.
- Combine and Fold
- Add dry ingredients to wet, stir until just combined.
- Fold in almonds or chocolate chips if using.
- Bake the Cake
- Pour into dish. Sprinkle more almonds on top if you like.
- Bake for 30 minutes, or until a toothpick comes out clean and center feels set.
- Cool and Garnish
- Let cool. Top with fruit and icing optionally (I used frozen blueberries and more almonds!)
- Prepare the Vanilla-Coffee Glaze (Optional)
- In a small bowl, whisk powdered sugar with 1 tablespoon of coffee and vanilla.
- Add more coffee a few drops at a time until it reaches a smooth, pourable consistency.
- Serve
- Drizzle over cooled banana cake and enjoy as a warm dessert or a cold breakfast!
